Will it work to measure just chlorine dioxide?

I am not sure, the lab is closed and I can't ask, but I'm thinking that I remember they did.

how do you store these?

My chefs carried them in their shirt pockets because we used them so much. The strips tear off like tape and as long as you don't get them prematurely wet you can store them anywhere. If they're handy you'll use them and trust me, it is real easy to overdo bleach.

Can anyone confirm how many tests this package provides? The description claims it can do 2,000 tests but it looks teeny-tiny.

The test strips are on a roll, so it depends partly on how much you tear off for each test. The other thing to consider is that there was one plastic container, but there were two rolls of test paper when I opened my package. I don't know if that is the normal configuration.
